A five-course degustation menu has been created especially for the evening by French guest chef Gwendal Le Ruyet, from Céleste restaurant at the Dancing House, in cooperation with CzecHouse chef Miroslav Hanzal.
The degustation menu, hosted at the CzecHouse Grill & Rotisserie at the Hilton Prague, will be paired with select wines from Chateau Mont Redon winery and entertainment will be provided in the form of live music to complete the special evening. The wines include magnum bottles of Chateauneuf-du-Pape of the 1994, 2000, 2004 and 2006 vintages, all of which are being presented by the owner of Chateau Mont Redon winery, Mr. Jean Abeille, organized in cooperation with Bacchus Vins & Champagnes.

Gwendal Le Ruyet, head chef of the Céleste restaurant at the Dancing House with experience from France, the United States and Ireland, joined the Céleste team at the beginning of 2009. He grew up in Brittany after catering college and two years of management studies, he returned to the kitchen drawn by its dynamism. He began his career working for Alain Ducasse at Il Cortile, Paris, where he took upon his philosophy of respecting product, season and detail, and learnt a lot from French, Mediterranean and Italian cuisines. His five-year career with Ducasse, IL Cortile, Abbaye de la Celle and 3 years at The Essex House in New York (3 Michelin stars) influenced him most within his career. He was also a part of the opening team of the luxury boutique hotel Ice House in Ireland, and spent summer at two star L'Ousteau de Baumaniere in Provence (2 Michelin stars).
Châteauneuf-du-Pape town and its famous wines date back to the 14th century. Château Mont Redon and the appellation Châteauneuf-du-Pape are located on the left bank of the river Rhôna, between Orange a Avignon. Pebbles, that are absorbing the Provence sun during the day and emit it during the night, are typical for the vineyards. This has a significant influence on the grapes. The Château is owned by two families, Abeille and Fabre, who brought the company amongst the top Châteauneuf-du-Pape producers. One of the above mentioned owners of the Château Mont Redon, Mr. Jean Abeille, will be present during the dinner and will introduce the wines personally.
The CzecHouse Grill & Rotisserie, the Hilton Prague flagship restaurant offers a creative concept allowing each guest to undergo an unforgettable dining experience; a concept which has been addressed with the greatest of care and attention to detail. Signature Hilton dishes, including a fine selection of organic US beef and impressive array of fresh fish (all cooked to perfection on a lava-stone grill), are suitably complimented by the restaurant’s interior by Philip Rodgers Design. The layout and state of the art Molteni cooking piano, Grills and Rotisserie equipment ensure great cooking flexibility, and an elegant visual impact to showcase the mastery and heritage of Hilton chefs. Carefully selected wines are presented in an open cabinet, and a comprehensive assortment of traditional Czech beers is also on display. The furnishings and interior design of the restaurant display a marriage of contemporary elegance, with refined references to Prague’s famous tradition and architecture.
